Greta’s Goodies: Blueberry-Peach Cobbler

There’s something wonderful about enjoying dessert while camping. Greta shares her family’s blueberry-peach cobbler recipe that’s so easy to make, it can be put together and cooked during your next campout. All you’ll need is a Dutch oven and a handful of ingredients.

Substitutions are Welcome

As always, Greta’s recipes are designed to be changed for those with food or other allergies. If anyone in your family is allergic to blueberries or peaches, find a complementary substitute fruit and use it instead. The end result should still be wonderful and yummy.

Ingredients

• 1 box yellow or white cake mix
• 1/3 stick butter (cut into small pieces)
• ½ teaspoon cinnamon
• 60-65 ounces peaches (fresh or canned)
• 1 can peaches (just the syrup)
• 1 ½ cup blueberries (fresh)

Coastal tip: Greta is using an 8-quart Dutch oven. Be sure your Dutch oven is big enough to hold all the ingredients, but not so big that it won’t fit into the fire.

Directions:

First, peel your peaches, cut out the pit, slice them, and pack them into a 32-ounce jar.

You can also use canned peaches.

Top the jar off with peach syrup. Then, dump the contents of the first jar into your Dutch oven. Repeat the process, packing more slices and pitted peaches and syrup into the jar and then pouring the contents of the jar into the Dutch oven.

You should have anywhere from 60-64 ounces of peaches in your Dutch oven. Add the blueberries.

Now add the rest of your ingredients, including the cake mix, butter and cinnamon. Mix thoroughly.

Place the Dutch oven directly into the coals. Place coals on top of the Dutch oven to ensure even cooking.

Cook on the campfire for up to 1 hour. If it’s still runny, cook for another 15 minutes until done.

To serve up to eight hungry people, scoop the contents into bowls and top with ice cream or heavy whipping cream.
